Ingredients

  • 1 pound chicken breast, cut into cubes
  • 2 tablespoons curry powder
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Skewers (soaked in water if wooden)

Instructions

  1. In a bowl, mix together curry powder, soy sauce, fish sauce, olive oil, honey, minced garlic, minced ginger, salt, and pepper to create a marinade.
  2. Add the chicken cubes to the marinade and toss until evenly coated. Allow the chicken to marinate for at least 30 minutes to absorb the flavors.
  3. Preheat the grill to medium-high heat. Once ready, thread the marinated chicken onto the skewers.
  4. Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is thoroughly cooked and has beautiful grill marks. Serve with rice or a fresh salad.

Notes

For deeper flavor, marinate chicken for 2 hours or overnight. Soak wooden skewers in water before grilling to prevent burning.
