Delightful Paleo pecan pie bars that bring the flavors of traditional pecan pie into a portable, easy-to-enjoy form.

- 1 1/2 cups pecans, chopped
- 1 cup almond flour
- 1/4 cup coconut oil, melted
- 1/4 cup honey or maple syrup
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
- In a mixing bowl, combine almond flour, melted coconut oil, honey or maple syrup, eggs, vanilla extract, and salt. Mix until well combined.
- Fold in the chopped pecans into the mixture until evenly distributed.
- Pour the mixture into the prepared baking dish and spread it evenly. Bake for 20-25 minutes or until the edges are golden.
- Allow to cool before cutting into bars.
Notes
Toast the pecans beforehand for enhanced flavor. For a nut-free version, use sunflower seeds instead of pecans.
