Description

Delightful Paleo pecan pie bars that bring the flavors of traditional pecan pie into a portable, easy-to-enjoy form.


Ingredients

  • 1 1/2 cups pecans, chopped
  • 1 cup almond flour
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. In a mixing bowl, combine almond flour, melted coconut oil, honey or maple syrup, eggs, vanilla extract, and salt. Mix until well combined.
  3. Fold in the chopped pecans into the mixture until evenly distributed.
  4. Pour the mixture into the prepared baking dish and spread it evenly. Bake for 20-25 minutes or until the edges are golden.
  5. Allow to cool before cutting into bars.

Notes

Toast the pecans beforehand for enhanced flavor. For a nut-free version, use sunflower seeds instead of pecans.
