Instructions
- In a large bowl, combine mashed sweet potatoes with gluten-free flour until smooth.
- Add eggs, milk, maple syrup, baking powder, cinnamon, and salt. Mix until smooth and thick but pourable.
- Heat a skillet over medium heat with butter or oil. Pour 1/4 cup of batter for each pancake.
- Cook until bubbles form, about 3-4 minutes on one side, then flip and cook until golden, about 2-3 minutes more. Serve warm with toppings.
Notes
For best flavor, use fresh, cooked sweet potatoes. Avoid overmixing to ensure fluffy pancakes.
