Description

A nutritious and colorful breakfast hash featuring sweet potatoes, vegetables, and eggs, perfect for any morning.


Ingredients

  • 2 medium sweet potatoes, diced
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cups spinach
  • 4 eggs
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional toppings: avocado, feta cheese, hot sauce

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced sweet potatoes to the skillet and cook for about 10-15 minutes until tender.
  3. Add chopped onion and bell pepper. Cook for an additional 5 minutes until softened, then stir in fresh spinach and let it wilt.
  4. Make two wells in the hash and crack an egg into each well. Cover and cook for about 5 minutes until egg whites are set. Season with salt and pepper. Top with avocado, feta cheese, or hot sauce as desired.

Notes

Can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet.
