- 2 medium sweet potatoes, diced
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 cups spinach
- 4 eggs
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced sweet potatoes to the skillet and cook for about 10-15 minutes until tender.
- Add chopped onion and bell pepper. Cook for an additional 5 minutes until softened, then stir in fresh spinach and let it wilt.
- Make two wells in the hash and crack an egg into each well. Cover and cook for about 5 minutes until egg whites are set. Season with salt and pepper. Top with avocado, feta cheese, or hot sauce as desired.
Notes
