- 2 cups fresh strawberries, hulled and sliced
- 1 cup water
- 1/4 cup sugar substitute (like Stevia or Erythritol)
- 1 tablespoon lemon juice
- 1/2 teaspoon pectin (optional for thickening)
Instructions
- In a medium saucepan, combine the fresh strawberries and water. Bring the mixture to a boil over medium heat. Once boiling, reduce the heat to a simmer.
- Using a potato masher or a fork, mash the strawberries until you reach your desired consistency.
- Stir in the sugar substitute, lemon juice, and pectin (if you’re using it). Cook on low heat for about 20 minutes, stirring occasionally.
- Once thickened, remove from heat and let cool to room temperature. Transfer to sterilized jars and store in the refrigerator.
Notes
For a more intense strawberry flavor, use ripe, fresh strawberries. Adjust the sweetness to your taste by varying the amount of sugar substitute.
