  • 8 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 1 tsp baking powder
  • ¼ tsp salt

Instructions

  1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan. Press half of the sugar cookie dough into the bottom to form a crust.
  2. In a mixing bowl, beat cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing thoroughly. Stir in vanilla extract, sour cream, baking powder, and salt.
  3. Pour the cheesecake mixture over the crust. Drop spoonfuls of remaining sugar cookie dough on top. Bake for 50-60 minutes until edges set and center jiggles slightly.
  4. Cool at room temperature for an hour, then refrigerate for at least 4 hours or overnight before serving.

Notes

For extra flavor, consider adding lemon zest or almond extract. Let the cheesecake cool completely before refrigerating for better setting.
