A delightful dish that combines pasta with a rich, creamy pumpkin sauce, cheese, and spinach.

- 12 jumbo pasta shells
- 1 cup ricotta cheese
- 1 cup cooked and chopped spinach
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 cups pumpkin puree
- 1 cup heavy cream
- 1 teaspoon nutmeg
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C). Cook the jumbo pasta shells according to package instructions, drain, and set aside.
- In a mixing bowl, combine ricotta, chopped spinach, mozzarella, Parmesan, garlic powder, Italian seasoning, and season with salt and pepper. Mix until creamy.
- Stuff each pasta shell with the cheese and spinach mixture.
- In a saucepan, combine pumpkin puree, heavy cream, nutmeg, and olive oil. Heat over medium until warmed through, stirring occasionally.
- Spread some pumpkin sauce on the bottom of a baking dish. Place stuffed shells in the dish and pour remaining sauce on top. Cover with foil and bake for 25 minutes, then remove foil and bake for another 10 minutes until bubbly and golden.
Notes
Can substitute half-and-half for heavy cream or add cooked sausage for a heartier dish. Customize the spices to your taste.
