Description

A delightful meal featuring sweet bell peppers filled with a savory mixture of ground meat, rice, tomatoes, and seasonings.


Ingredients

  • 4 bell peppers
  • 1 cup cooked rice
  • 1 pound ground meat (beef, turkey, or chicken)
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes.
  2. In a skillet over medium heat, cook the chopped onion and minced garlic until softened, about 3-4 minutes.
  3. Add the ground meat and cook until browned. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
  4. Stuff the mixture into the hollowed-out peppers. Place them upright in a baking dish, cover with foil, and bake for 25-30 minutes.
  5. Remove the foil, sprinkle cheese on top if desired, and bake for an additional 10 minutes until the cheese is melted. Serve warm.

Notes

For added flavor, consider chopping herbs like parsley or basil into the filling. Vegetarian versions can be made using black beans or lentils instead of meat.
