Delicious bite-sized pancakes with strawberries and cottage cheese for a nutritious breakfast or snack.
Ingredients

- 1 cup cottage cheese
- 1 cup flour
- 1 tsp vanilla extract
- 1 tsp baking powder
- 2 eggs
- 1/4 cup milk
- 1/2 cup diced strawberries
- 1 tbsp sugar (optional)
- Butter or oil for cooking
Instructions
- In a bowl, combine the cottage cheese, flour, baking powder, eggs, milk, and vanilla extract. Mix until well combined.
- Gently fold in the diced strawberries.
- Heat a skillet over medium heat and add a little butter or oil.
- Pour small amounts of batter onto the skillet to form little pancakes and cook until bubbles form on the surface. Flip and cook until golden brown.
- Remove from the skillet and repeat with the remaining batter. Serve warm, optionally with additional strawberries or syrup.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months.
