Description

Delicious Strawberry Protein Muffins packed with nutrition and sweet flavor, perfect for breakfast or as a snack.


Ingredients

  • 1 cup fresh strawberries, chopped
  • 1 cup protein powder
  • 1 cup whole wheat flour
  • 1/2 cup oats
  • 1/2 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 2 eggs
  • 1/2 cup milk (dairy or non-dairy)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine whole wheat flour, protein powder, oats, baking powder, baking soda, and salt. Whisk together.
  3. In another bowl, whisk together Greek yogurt, honey, eggs, milk, and vanilla extract until smooth.
  4. Fold the chopped strawberries into the wet ingredients, then pour this into the dry ingredients and stir until just combined.
  5. Divide the batter among the muffin cups, filling each about 3/4 full. Bake for 18-20 minutes.
  6. Let muffins cool in the tin for a few minutes before transferring to a wire rack.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for a week. Freeze for up to 3 months.
