Description

A delightful jam combining sweet strawberries and floral lavender, perfect for toast, yogurts, and pastries.


Ingredients

  • 2 cups fresh strawberries, hulled and chopped
  • 1 cup granulated sugar
  • 1/4 cup water
  • 2 tablespoons dried lavender buds
  • 1 tablespoon lemon juice
  • 1 package (1.75 oz) fruit pectin

Instructions

  1. Combine the strawberries, sugar, and water in a medium saucepan and macerate for about 10 minutes.
  2. Heat the mixture over medium-high heat until it comes to a rolling boil, stirring frequently.
  3. Reduce the heat and simmer for about 10 minutes to break down the strawberries.
  4. Combine lavender buds and lemon juice in a separate saucepan, heat gently, then strain.
  5. Add the infused lavender mixture to the strawberry mixture and stir well.
  6. Stir in the fruit pectin and bring to a boil for 1-2 minutes.
  7. Pour the hot jam into sterilized jars, leaving 1/4 inch of headspace.
  8. Seal with lids and let the jars cool at room temperature.
  9. Store in the refrigerator for up to three weeks or process for long-term storage.

Notes

Choose the ripest strawberries for best flavor. Adjust sugar to taste.
