A delightful jam combining sweet strawberries and floral lavender, perfect for toast, yogurts, and pastries.
Ingredients

- 2 cups fresh strawberries, hulled and chopped
- 1 cup granulated sugar
- 1/4 cup water
- 2 tablespoons dried lavender buds
- 1 tablespoon lemon juice
- 1 package (1.75 oz) fruit pectin
Instructions
- Combine the strawberries, sugar, and water in a medium saucepan and macerate for about 10 minutes.
- Heat the mixture over medium-high heat until it comes to a rolling boil, stirring frequently.
- Reduce the heat and simmer for about 10 minutes to break down the strawberries.
- Combine lavender buds and lemon juice in a separate saucepan, heat gently, then strain.
- Add the infused lavender mixture to the strawberry mixture and stir well.
- Stir in the fruit pectin and bring to a boil for 1-2 minutes.
- Pour the hot jam into sterilized jars, leaving 1/4 inch of headspace.
- Seal with lids and let the jars cool at room temperature.
- Store in the refrigerator for up to three weeks or process for long-term storage.
Notes
Choose the ripest strawberries for best flavor. Adjust sugar to taste.
