Description

These poppable treats combine the classic flavors of strawberry cheesecake in a fun, bite-sized format with creamy filling, a crunchy graham cracker base, and a fruity strawberry topping.


Ingredients

  • 1 cup crushed graham crackers
  • 1/2 cup unsalted butter, melted
  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping (like Cool Whip)
  • 1 cup fresh strawberries, diced
  • 1/2 cup strawberry jam
  • 1/4 cup white chocolate chips, melted (optional)
  • Fresh strawberries for garnish

Instructions

  1. In a medium bowl, mix the crushed graham crackers with the melted unsalted butter until well combined.
  2. Press the graham cracker mixture into the bottom of a mini muffin pan, filling each cavity approximately 1/4 inch high.
  3. Bake the crusts in a preheated oven at 350°F (175°C) for about 5 minutes, or until they are slightly golden. Remove from the oven and allow them to cool.
  4. In a mixing bowl, beat the softened cream cheese with a hand mixer until smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing until fully incorporated and fluffy. Fold in the whipped topping until the mixture is light and airy.
  5. Once the crusts have cooled, spoon the cheesecake filling into each mini muffin cup, filling them to the top.
  6. In a small bowl, mix the diced strawberries with the strawberry jam until well coated. Top each cheesecake bite with a spoonful of the jammed strawberries.
  7. For an optional finishing touch, drizzle melted white chocolate over the tops of the cheesecake bites. Allow to set for a few minutes.
  8. Refrigerate the strawberry cheesecake bites for at least 2 hours before serving to allow flavors to meld and the filling to firm up.
  9. Before serving, garnish with fresh strawberries on top for an appealing presentation.
