Description

A delightful twist on a classic treat made with ripe bananas and juicy strawberries, perfect for breakfast, snacks, or dessert.


Ingredients

  • 2 ripe bananas
  • 1 cup strawberries, chopped
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
  2. Mash the ripe bananas with a fork until smooth and stir in the melted butter.
  3. Mix in the baking soda and a pinch of salt, then add the sugar, beaten egg, and vanilla extract.
  4. Gently fold in the all-purpose flour until just incorporated, then fold in the chopped strawberries.
  5. Pour the batter into the prepared loaf pan and bake for 60-65 minutes, or until a toothpick comes out clean.
  6. Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Notes

Store cooled bread in an airtight container for up to 3 days, or wrap and freeze for up to 2 months. Thaw overnight in the fridge before enjoying.
