- 2 ripe bananas
- 1 cup strawberries, chopped
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
- Mash the ripe bananas with a fork until smooth and stir in the melted butter.
- Mix in the baking soda and a pinch of salt, then add the sugar, beaten egg, and vanilla extract.
- Gently fold in the all-purpose flour until just incorporated, then fold in the chopped strawberries.
- Pour the batter into the prepared loaf pan and bake for 60-65 minutes, or until a toothpick comes out clean.
- Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
Notes
Store cooled bread in an airtight container for up to 3 days, or wrap and freeze for up to 2 months. Thaw overnight in the fridge before enjoying.
