Ingredients

  • 2 cups rice noodles
  • 1 cup shredded carrots
  • 1 cup cucumber, sliced
  • 1 bell pepper, sliced
  • 1 cup red cabbage, shredded
  • 1 cup cooked protein (tofu, shrimp, or chicken)
  • 1/4 cup chopped fresh herbs (mint, cilantro)
  • 1/2 cup peanut sauce

Instructions

  1. Cook the rice noodles according to package instructions, then drain and rinse with cold water.
  2. In a bowl, combine the rice noodles, shredded carrots, cucumber, bell pepper, red cabbage, and your choice of cooked protein.
  3. Toss in chopped herbs for added flavor.
  4. Drizzle peanut sauce over the bowl and mix well.
