Ingredients

- 1 cup shredded carrots
- 1 cup cucumber, sliced
- 1 bell pepper, sliced
- 1 cup red cabbage, shredded
- 1 cup cooked protein (tofu, shrimp, or chicken)
- 1/4 cup chopped fresh herbs (mint, cilantro)
- 1/2 cup peanut sauce
Instructions
- Cook the rice noodles according to package instructions, then drain and rinse with cold water.
- In a bowl, combine the rice noodles, shredded carrots, cucumber, bell pepper, red cabbage, and your choice of cooked protein.
- Toss in chopped herbs for added flavor.
- Drizzle peanut sauce over the bowl and mix well.
