- 2 cups cooked chicken, shredded
- 1 package (16 oz) gnocchi
- 4 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup spinach
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat. Add the chopped onions, diced carrots, and diced celery. Sauté until the vegetables soften, about 5-7 minutes.
- Stir in the minced garlic and Italian seasoning. Cook for an additional minute until the garlic becomes fragrant.
- Pour in the chicken broth and bring the mixture to a boil. Add the gnocchi and cook for about 2-3 minutes until they float to the surface.
- Add the shredded chicken and spinach to the pot. Let the soup simmer for an extra 2-3 minutes until the spinach wilts. Season with salt and pepper to taste, then serve hot.
Notes
For a richer flavor, use homemade chicken broth. This soup can also be frozen for up to 3 months.
