- 2 cups fresh spinach, chopped
- 2 cups yellow squash, sliced
- 1 cup onions, chopped
- 2 cups shredded cheese (cheddar or mozzarella)
- 1 cup heavy cream
- 2 eggs
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup breadcrumbs (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, sauté the chopped onions and sliced yellow squash until tender, about 5-7 minutes over medium heat.
- Add the fresh spinach to the skillet and cook until it wilts.
- In a mixing bowl, whisk together the heavy cream, eggs, garlic powder, salt, and pepper.
- Combine the sautéed vegetables with the cream mixture and fold in half of the shredded cheese.
- Pour the mixture into a greased casserole dish, spreading it evenly.
- Top with the remaining cheese and breadcrumbs if desired.
- Bake for 30-35 minutes until golden and bubbly.
Notes
You can use a mix of cheeses or add other vegetables for extra flavor. For a vegan version, substitute heavy cream with coconut cream and use plant-based cheese.
