Description

A delicious and healthy dish that combines earthy flavors of spinach and squash in a creamy casserole. Perfect as a side dish or a light meal.


Ingredients

  • 2 cups fresh spinach, chopped
  • 2 cups yellow squash, sliced
  • 1 cup onions, chopped
  • 2 cups shredded cheese (cheddar or mozzarella)
  • 1 cup heavy cream
  • 2 eggs
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup breadcrumbs (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, sauté the chopped onions and sliced yellow squash until tender, about 5-7 minutes over medium heat.
  3. Add the fresh spinach to the skillet and cook until it wilts.
  4. In a mixing bowl, whisk together the heavy cream, eggs, garlic powder, salt, and pepper.
  5. Combine the sautéed vegetables with the cream mixture and fold in half of the shredded cheese.
  6. Pour the mixture into a greased casserole dish, spreading it evenly.
  7. Top with the remaining cheese and breadcrumbs if desired.
  8. Bake for 30-35 minutes until golden and bubbly.

Notes

You can use a mix of cheeses or add other vegetables for extra flavor. For a vegan version, substitute heavy cream with coconut cream and use plant-based cheese.
