Description

Ingredients

  • 1/2 cup fresh spinach, chopped
  • 1/2 cup mushrooms, sliced
  • 1 tablespoon butter
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk the eggs with a pinch of salt and pepper until well combined.
  2. Heat the butter in a skillet over medium heat until it melts.
  3. Add the sliced mushrooms to the skillet and sauté until tender and lightly browned, about 3-4 minutes.
  4. Stir in the chopped spinach and cook until wilted, about 1 minute.
  5. Pour the whisked eggs into the skillet over the sautéed vegetables and cook undisturbed for about a minute.
  6. Gently fold the omelette in half with a spatula and cook for another minute or until cooked to preference.
  7. Serve hot, optionally topped with cheese.
