Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt
  • Buttercream frosting (for filling)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, stir together the all-purpose flour, baking soda, and baking powder.
  3. Cream together the softened unsalted butter and white sugar until smooth and fluffy.
  4. Beat in the egg, vanilla extract, and almond extract into the butter-sugar mixture. Gradually blend in the dry mixture until fully incorporated.
  5. Roll rounded teaspoonfuls of dough into balls and place them on ungreased cookie sheets.
  6. Flatten the balls gently until they are about 1/4 inch thick.
  7. Bake for about 8 to 10 minutes, or until light golden.
  8. Let cookies cool on wire racks.
  9. Spread buttercream frosting on one cookie and sandwich it with another cookie.
  10. Dust with powdered sugar before serving.

Notes

Use room temperature butter for the best texture and don’t over-mix the dough.
