Delightful treat that combines the classic campfire dessert into bite-sized cookie cups featuring chocolate, graham crackers, and toasted marshmallows.

- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup milk chocolate chips
- 3/4 cup graham cracker pieces
- 6 mini marshmallows, halved
Instructions
- Preheat your oven to 350°F (175°C) and grease a mini muffin pan.
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time, mixing well, and stir in vanilla extract.
- In a separate bowl, whisk flour, baking soda, and salt. Gradually add to the wet ingredients, stirring until just combined. Fold in chocolate chips.
- Press graham cracker pieces into the bottom of each muffin well. Scoop cookie dough into each well, filling two-thirds full. Bake for 10-12 minutes or until edges turn golden brown.
- Place half a marshmallow on top of each cookie cup and broil on high for 1-2 minutes until toasty. Let cool for 5 minutes before transferring to a wire rack.
Notes
Best enjoyed warm, can be served at room temperature. Store in an airtight container for up to 3 days or refrigerate for up to 1 week.
