S’mores Cookie Cups

Description

Delightful treat that combines the classic campfire dessert into bite-sized cookie cups featuring chocolate, graham crackers, and toasted marshmallows.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup milk chocolate chips
  • 3/4 cup graham cracker pieces
  • 6 mini marshmallows, halved

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin pan.
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time, mixing well, and stir in vanilla extract.
  3. In a separate bowl, whisk flour, baking soda, and salt. Gradually add to the wet ingredients, stirring until just combined. Fold in chocolate chips.
  4. Press graham cracker pieces into the bottom of each muffin well. Scoop cookie dough into each well, filling two-thirds full. Bake for 10-12 minutes or until edges turn golden brown.
  5. Place half a marshmallow on top of each cookie cup and broil on high for 1-2 minutes until toasty. Let cool for 5 minutes before transferring to a wire rack.

Notes

Best enjoyed warm, can be served at room temperature. Store in an airtight container for up to 3 days or refrigerate for up to 1 week.
