Delightful individual portions of meatloaf with smoky BBQ, crispy bacon, and creamy mashed potatoes, perfect for any occasion.

- 2 lbs ground beef (80/20 blend recommended)
- 1 cup panko breadcrumbs
- 1/2 cup onion (finely diced)
- 1/2 cup bell pepper (finely diced, any color)
- 2 cloves garlic (minced)
- 1 large egg
- 1/4 cup ketchup
- 2 tbsp Worcestershire sauce
- 1 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 12 slices bacon (regular cut, not thick-cut)
- 1 cup BBQ sauce (your favorite brand)
- 2 tbsp bourbon (or apple juice for an alcohol-free version)
- 1 tbsp brown sugar
- 1 tsp apple cider vinegar
- 3 lbs russet potatoes (peeled and cubed)
- 1/2 cup milk (warmed)
- 1/4 cup butter
- Salt and pepper (to taste for mashed potatoes)
Instructions
- Preheat your oven to 375°F (190°C) and generously grease a 12-cup muffin tin.
- In a large mixing bowl, combine ground beef, panko, onion, bell pepper, garlic, egg, ketchup, Worcestershire sauce, smoked paprika, salt, and pepper until just combined.
- Press the meat mixture into each muffin cup, wrap bacon around the top, and bake for 25-30 minutes until cooked through.
- Meanwhile, boil potatoes until fork-tender, then mash with milk, butter, salt, and pepper.
- Prepare BBQ glaze by simmering BBQ sauce, bourbon, brown sugar, and vinegar.
- Brush glaze on baked cupcakes and return to the oven for an additional 5-10 minutes.
- Cool briefly before piping mashed potatoes on top of each cupcake and drizzle with remaining BBQ glaze. Serve warm.
Notes
Can be made ahead of time and stored in the refrigerator or frozen for later.
