  • 1 teaspoon onion powder
  • 4 cups vegetable broth

Instructions

  1. Preparation: Rinse and soak the black eyed peas according to package instructions. Drain and set aside.
  2. Sautéing the Aromatics: In a large pot, heat some oil over medium heat. Add the chopped onion, minced garlic, diced carrot, and diced celery. Sauté until softened, about 5-7 minutes.
  3. Cooking the Greens: Stir in the chopped collard greens and cook until they wilt, about 3-4 minutes.
  4. Adding the Main Ingredients: Add the soaked black eyed peas, diced tomatoes, vegetable broth, and all remaining spices. Stir everything together to combine.
  5. Simmering the Soup: Bring to a boil, reduce heat, and simmer for 30-40 minutes or until the peas are tender. Add more broth or water if needed.
  6. Final Touches: Adjust seasoning to taste with salt and pepper, and serve hot.
