- 2 lbs chicken thighs
- 1 cup creamy peanut butter
- 1 cup coconut milk
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 2 tablespoons lime juice
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 teaspoon red pepper flakes
- Salt and pepper to taste
- Chopped peanuts and cilantro for garnish
Instructions
- Combine peanut butter, coconut milk, soy sauce, brown sugar, lime juice, garlic, ginger, red pepper flakes, salt, and pepper in a slow cooker. Stir until smooth.
- Place the chicken thighs in the slow cooker and coat them thoroughly with the peanut sauce.
- Cover the slow cooker and set it to LOW for 6-8 hours or HIGH for 3-4 hours.
- Once cooked, shred the chicken in the sauce and serve over rice or noodles, garnished with peanuts and cilantro.
Notes
Serve with lime wedges on the side for extra freshness. For a vegetarian version, replace chicken with tofu or chickpeas.
