- 2 lbs boneless, skinless chicken thighs
- 1/4 cup olive oil
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- 1 tablespoon paprika
- 1 teaspoon turmeric
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- Juice of 1 lemon
- Pita bread or rice for serving
- Toppings: sliced cucumbers, tomatoes, and tahini sauce
Instructions
- Mix the olive oil, cumin, coriander, paprika, turmeric, garlic powder, onion powder, cayenne pepper, salt, pepper, and lemon juice in a bowl until well combined.
- Place the chicken thighs in the slow cooker and pour the spice mixture over them, ensuring they are well coated.
- Cover the slow cooker and cook on low for 6-8 hours or on high for 4 hours until tender.
- Shred the chicken using two forks directly in the slow cooker and mix with the juices. Serve with pita bread, rice, or wraps topped with cucumbers, tomatoes, and tahini sauce.
Notes
For best flavor, marinate the chicken overnight in the spice mixture. Adjust the cayenne pepper for desired spice level.
