Description

Deliciously fluffy muffins flavored with warm spices and mixed dried fruit, topped with marzipan for a delightful treat, especially around Easter.


Ingredients

  • 250g all-purpose flour
  • 150g sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 100g butter, softened
  • 2 large eggs
  • 150ml milk
  • 150g mixed dried fruit
  • 100g marzipan, cut into small pieces
  • Extra marzipan for topping

Instructions

  1. Preheat the oven to 180°C (350°F) and line a muffin tin with paper liners.
  2. In a bowl, mix together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. Cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time.
  4. Gradually add the dry ingredients, alternating with the milk, and mix until well combined. Fold in the dried fruit and marzipan pieces gently.
  5. Spoon the mixture into the muffin cups, filling each about 2/3 full.
  6. Bake for 15-20 minutes or until a toothpick inserted comes out clean.
  7. Once cooled, roll the extra marzipan into small rounds and place them on top of the muffins.
  8. Serve warm and enjoy!

Notes

Store in an airtight container at room temperature for up to 3 days or freeze for up to three months.
