Description
Deliciously fluffy muffins flavored with warm spices and mixed dried fruit, topped with marzipan for a delightful treat, especially around Easter.
Ingredients

- 250g all-purpose flour
- 150g sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 100g butter, softened
- 2 large eggs
- 150ml milk
- 150g mixed dried fruit
- 100g marzipan, cut into small pieces
- Extra marzipan for topping
Instructions
- Preheat the oven to 180°C (350°F) and line a muffin tin with paper liners.
- In a bowl, mix together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
- Cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time.
- Gradually add the dry ingredients, alternating with the milk, and mix until well combined. Fold in the dried fruit and marzipan pieces gently.
- Spoon the mixture into the muffin cups, filling each about 2/3 full.
- Bake for 15-20 minutes or until a toothpick inserted comes out clean.
- Once cooled, roll the extra marzipan into small rounds and place them on top of the muffins.
- Serve warm and enjoy!
Notes
Store in an airtight container at room temperature for up to 3 days or freeze for up to three months.
