Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into pieces
  • 8 oz mushrooms, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Optional: sesame seeds and green onions for garnish

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add minced garlic and ginger to the pan, sauté for about 1 minute until fragrant.
  3. Introduce the shrimp to the pan, cooking until they turn pink and opaque, around 2-3 minutes.
  4. Add the asparagus pieces and sliced mushrooms, stir-fry for another 5-7 minutes until tender yet crisp.
  5. Pour in the soy sauce, stirring to coat shrimp and vegetables evenly.
  6. Season with salt and pepper to taste, cooking for an additional minute.
  7. Serve hot, garnished with optional sesame seeds and chopped green onions if desired.

Notes

Use fresh ingredients for the best flavor. Don’t overcook the shrimp as they can become rubbery.
