- 1 bunch asparagus, trimmed and cut into pieces
- 8 oz mushrooms, sliced
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- Optional: sesame seeds and green onions for garnish
Instructions
- Heat olive oil in a large pan over medium heat.
- Add minced garlic and ginger to the pan, sauté for about 1 minute until fragrant.
- Introduce the shrimp to the pan, cooking until they turn pink and opaque, around 2-3 minutes.
- Add the asparagus pieces and sliced mushrooms, stir-fry for another 5-7 minutes until tender yet crisp.
- Pour in the soy sauce, stirring to coat shrimp and vegetables evenly.
- Season with salt and pepper to taste, cooking for an additional minute.
- Serve hot, garnished with optional sesame seeds and chopped green onions if desired.
