Description

A comforting Shepherd’s Pie featuring a savory meat filling topped with a sweet and creamy sweet potato mash.


Ingredients

  • 1 lb ground beef or lamb
  • 1 onion, chopped
  • 2 carrots, diced
  • 1 cup peas
  • 2 cups sweet potatoes, peeled and cubed
  • 1/4 cup milk
  • 2 tbsp butter
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and diced carrots, sauté until softened (5-7 minutes).
  3. Add the ground beef or lamb, cooking until browned. Season with thyme, salt, and pepper. Stir in peas and cook for another 2-3 minutes.
  4. In a separate pot, boil cubed sweet potatoes in salted water until tender (around 15 minutes). Drain, then mash with milk and butter until smooth.
  5. Spread the meat and vegetable mixture evenly in a baking dish, then top with the sweet potato mash.
  6. Bake in the preheated oven for 20-25 minutes, until heated through and slightly golden.

Notes

Serve warm with a green salad or steamed vegetables. Leftovers can be refrigerated for up to 3 days or frozen for up to 2 months.
