Description
A comforting Shepherd’s Pie featuring a savory meat filling topped with a sweet and creamy sweet potato mash.

			- 1 lb ground beef or lamb
 - 1 onion, chopped
 - 2 carrots, diced
 - 1 cup peas
 - 2 cups sweet potatoes, peeled and cubed
 - 1/4 cup milk
 - 2 tbsp butter
 - 1 tsp dried thyme
 - Salt and pepper to taste
 - 1 tbsp olive oil
 
Instructions
- Preheat the oven to 400°F (200°C).
 - In a skillet, heat the olive oil over medium heat. Add the chopped onion and diced carrots, sauté until softened (5-7 minutes).
 - Add the ground beef or lamb, cooking until browned. Season with thyme, salt, and pepper. Stir in peas and cook for another 2-3 minutes.
 - In a separate pot, boil cubed sweet potatoes in salted water until tender (around 15 minutes). Drain, then mash with milk and butter until smooth.
 - Spread the meat and vegetable mixture evenly in a baking dish, then top with the sweet potato mash.
 - Bake in the preheated oven for 20-25 minutes, until heated through and slightly golden.
 
Notes
Serve warm with a green salad or steamed vegetables. Leftovers can be refrigerated for up to 3 days or frozen for up to 2 months.
