Description

A delightful one-pan meal featuring tender tortellini, fresh broccoli, and juicy cherry tomatoes, all baked to perfection with a melty cheese topping.


Ingredients

  • 1 pkg tortellini (cheese or your choice)
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the tortellini, broccoli florets, and halved cherry tomatoes on a large sheet pan.
  3. Drizzle the mixture with olive oil, then sprinkle with garlic powder, Italian seasoning, salt, and pepper. Toss everything together to coat.
  4. Spread the mixture in an even layer on the sheet pan. Bake for 20 minutes. Remove the pan and sprinkle the mozzarella cheese over the top. Return to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.

Notes

Serve with a side salad, a sprinkle of fresh Parmesan cheese, or a drizzle of balsamic glaze. Great paired with crusty bread.
