Instructions
- Peel the sweet potatoes and cut them into uniform 1-inch cubes. Mince the garlic and gather all ingredients.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat for about 2 minutes. Add the sausage and cook for 5-7 minutes until browned.
- Add sweet potatoes to the skillet and cook for an additional 5 minutes, stirring occasionally until they start to soften.
- In a small bowl, whisk together honey, minced garlic, soy sauce, paprika, salt, and pepper. Pour the sauce over the mixture, stir to coat, cover, and simmer for 10-12 minutes until sweet potatoes are tender.
