Description

A delightful dish that perfectly balances savory and sweet flavors with hearty sausage, tender sweet potatoes, and a sticky honey garlic sauce.

Ingredients

Scale
  • 1 pound sausage (Italian, chicken, or plant-based)
  • 2 medium sweet potatoes (peeled and cubed into 1-inch pieces)
  • 1/4 cup honey (or maple syrup for a vegan option)
  • 3 cloves garlic (minced)
  • 2 tablespoons soy sauce (tamari for gluten-free)
  • 2 tablespoons olive oil (or any neutral oil)
  • 1 teaspoon paprika (smoked recommended)
  • Salt and pepper (to taste)
  • 1/4 cup fresh parsley (chopped, for garnish)

Instructions

  1. Peel the sweet potatoes and cut them into uniform 1-inch cubes. Mince the garlic and gather all ingredients.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat for about 2 minutes. Add the sausage and cook for 5-7 minutes until browned.
  3. Add sweet potatoes to the skillet and cook for an additional 5 minutes, stirring occasionally until they start to soften.
  4. In a small bowl, whisk together honey, minced garlic, soy sauce, paprika, salt, and pepper. Pour the sauce over the mixture, stir to coat, cover, and simmer for 10-12 minutes until sweet potatoes are tender.
  5. Remove from heat, garnish with parsley, and serve hot.

Notes

For a lighter or vegan-friendly dish, use turkey sausage or plant-based options. This dish is best enjoyed fresh; it doesn’t freeze well due to the garlic sauce’s consistency.
