A hearty dish combining sausage and sweet potatoes with a delicious honey garlic sauce, perfect for busy weeknights.

- 1 lb sausage (Italian or chicken)
- 2 large sweet potatoes, peeled and cubed
- 1/4 cup honey
- 3 cloves garlic, minced
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon olive oil
- 1 teaspoon paprika
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Peel and cube the sweet potatoes.
- In a skillet, heat olive oil over medium heat. Add sausage and brown for 5-7 minutes.
- Stir in cubed sweet potatoes and cook for another 5 minutes.
- In a bowl, mix honey, garlic, soy sauce, paprika, salt, and pepper. Pour the sauce over the sausage and sweet potatoes.
- Cover and simmer for 10 minutes until sweet potatoes are tender.
- Garnish with parsley and enjoy!
Notes
Cut the sweet potatoes into uniform cubes for even cooking. Adjust sweetness by changing the amount of honey. Feel free to add other vegetables.
