A hearty dish combining sausage and sweet potatoes with a delicious honey garlic sauce, perfect for busy weeknights.


Ingredients

  • 1 lb sausage (Italian or chicken)
  • 2 large sweet potatoes, peeled and cubed
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Peel and cube the sweet potatoes.
  2. In a skillet, heat olive oil over medium heat. Add sausage and brown for 5-7 minutes.
  3. Stir in cubed sweet potatoes and cook for another 5 minutes.
  4. In a bowl, mix honey, garlic, soy sauce, paprika, salt, and pepper. Pour the sauce over the sausage and sweet potatoes.
  5. Cover and simmer for 10 minutes until sweet potatoes are tender.
  6. Garnish with parsley and enjoy!

Notes

Cut the sweet potatoes into uniform cubes for even cooking. Adjust sweetness by changing the amount of honey. Feel free to add other vegetables.
