Delightful cookies combining crunchy pistachios and sweet honey, perfectly balanced between chewy and crunchy.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped pistachios
  • Flaky sea salt, for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, granulated sugar, brown sugar, and honey until light and fluffy. Beat in the egg and vanilla extract.
  3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet mixture, stirring gently.
  4. Fold in the chopped pistachios until evenly distributed.
  5. Scoop rounded tablespoons of dough and roll into balls. Place them 2 inches apart on the baking sheet and sprinkle with flaky sea salt.
  6. Bake for 10 to 12 minutes, or until the edges are golden. Cool on the sheet for 5 minutes before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for up to one week. Freeze unbaked dough for up to three months.
