Instructions
- Combine granulated sugar, unsalted butter, and heavy cream in a medium saucepan. Cook over medium heat, stirring continuously until boiling.
- Reduce heat and let it simmer without stirring for about 5 minutes until the caramel forms.
- Remove from heat and stir in sea salt, chocolate chips, and vanilla extract until smooth.
- Cool the mixture slightly, then transfer to the refrigerator to chill for about 2 hours, until firm.
- Roll portions into balls and coat each in cocoa powder.
- Store truffles in an airtight container in the refrigerator until ready to serve.
