Ingredients

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter
  • 1/2 cup heavy cream
  • 1/2 teaspoon sea salt
  • 1 cup semisweet chocolate chips
  • 1 teaspoon vanilla extract
  • 1/4 cup cocoa powder for rolling

Instructions

  1. Combine granulated sugar, unsalted butter, and heavy cream in a medium saucepan. Cook over medium heat, stirring continuously until boiling.
  2. Reduce heat and let it simmer without stirring for about 5 minutes until the caramel forms.
  3. Remove from heat and stir in sea salt, chocolate chips, and vanilla extract until smooth.
  4. Cool the mixture slightly, then transfer to the refrigerator to chill for about 2 hours, until firm.
  5. Roll portions into balls and coat each in cocoa powder.
  6. Store truffles in an airtight container in the refrigerator until ready to serve.
