  • 1 rotisserie chicken
  • 2 cups cooked rice
  • 1 cup diced vegetables (bell peppers, onions, carrots)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). While the oven heats, shred the rotisserie chicken, removing the skin and bones.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced vegetables and sauté until they are tender and fragrant, about 5-7 minutes.
  3. Stir in the shredded chicken along with the cooked rice, garlic powder, paprika, salt, and pepper. Combine everything well.
  4. Transfer the mixture to a baking dish and bake for 20-25 minutes, or until everything is heated through and the edges are slightly golden. Garnish with fresh herbs if desired before serving.

Notes

Experiment with different vegetables or grains based on what’s available. Consider adding cream cheese or shredded cheese for extra creaminess.
