Ingredients

  • 2 large sweet potatoes
  • 4 oz goat cheese
  • 2 cups mixed greens
  • 1/4 cup walnuts (optional)
  • 1/4 cup dried cranberries (optional)
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons maple syrup
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Peel and cube the sweet potatoes, then toss them with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender and caramelized.
  2. Prepare the maple-balsamic vinaigrette by whisking together balsamic vinegar, maple syrup, and a pinch of salt.
  3. Combine in a large bowl, the mixed greens, roasted sweet potatoes, crumbled goat cheese, walnuts, and cranberries.
