- 2 large sweet potatoes
- 4 oz goat cheese
- 2 cups mixed greens
- 1/4 cup walnuts (optional)
- 1/4 cup dried cranberries (optional)
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 2 tablespoons maple syrup
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Peel and cube the sweet potatoes, then toss them with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender and caramelized.
- Prepare the maple-balsamic vinaigrette by whisking together balsamic vinegar, maple syrup, and a pinch of salt.
- Combine in a large bowl, the mixed greens, roasted sweet potatoes, crumbled goat cheese, walnuts, and cranberries.
- Drizzle with the dressing and toss gently to combine. Serve the salad warm or at room temperature.
Notes
