A delightful Mediterranean dessert featuring moist cake layered with pistachios and drizzled with sweet syrup.
Ingredients

- 1 cup semolina
- 1 cup plain yogurt
- 1 cup sugar
- 1/2 cup vegetable oil
- 4 eggs
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 cup crushed pistachios
- 1 cup water (for syrup)
- 1/2 cup sugar (for syrup)
- 1 teaspoon lemon juice (for syrup)
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- In a large bowl, combine the semolina, yogurt, sugar, vegetable oil, eggs, baking powder, and vanilla extract; mix until smooth.
- Pour half of the batter into the greased baking dish. Spread the crushed pistachios over the batter, then pour the remaining batter on top.
- Bake for 30-35 minutes or until golden and a toothpick inserted comes out clean.
- In a pan, combine water, sugar, and lemon juice for the syrup; bring to a boil and simmer for about 10 minutes.
- Pour the hot syrup evenly over the baked cake while still in the dish; allow to cool for a few hours before serving.
Notes
Revani can be served chilled and garnished with extra pistachios or whipped cream. Store in an airtight container for up to three days at room temperature or refrigerate for a week.
