Ingredients

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar

  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 8 ounces cream cheese, softened
  • 3 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, beat the softened butter and granulated sugar together until light and fluffy.
  4. Add the egg, red food coloring, vanilla extract, and almond extract to the butter mixture and mix until combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until a thick dough forms.
  6. Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are set.
  8. Let the cookies cool completely on the baking sheet.
  9. To make the cream cheese filling, beat the softened cream cheese and powdered sugar together until smooth and creamy.
  10. Once the cookies are cool, spread a generous amount of cream cheese filling on one cookie and sandwich it with another.
  11. Your cookies are ready to be enjoyed!
