- 8 ounces cream cheese, softened
- 3 cups powdered sugar
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- In a large bowl, beat the softened butter and granulated sugar together until light and fluffy.
- Add the egg, red food coloring, vanilla extract, and almond extract to the butter mixture and mix until combined.
- Gradually add the dry ingredients to the wet ingredients and mix until a thick dough forms.
- Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are set.
- Let the cookies cool completely on the baking sheet.
- To make the cream cheese filling, beat the softened cream cheese and powdered sugar together until smooth and creamy.
- Once the cookies are cool, spread a generous amount of cream cheese filling on one cookie and sandwich it with another.
