Description

A refreshing salad featuring quinoa, crunchy apples, nuts, and cranberries, perfect for a light meal or side dish.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 apple, diced
  • 1/2 cup celery, chopped
  • 1/4 cup red onion, finely chopped
  • 1/2 cup walnuts, chopped
  • 1/4 cup dried cranberries
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water. In a pot, bring 2 cups of water to a boil. Add the rinsed quinoa, reduce the heat, cover, and let it simmer for about 15 minutes or until all the water is absorbed. Fluff with a fork and set aside to cool slightly.
  2. Combine the cooked quinoa, diced apple, chopped celery, finely chopped red onion, walnuts, dried cranberries, and parsley in a large bowl.
  3. Whisk together the olive oil, lemon juice, salt, and pepper in a small bowl to make the dressing.
  4. Pour the dressing over the salad and toss everything together to ensure it’s well combined. Chill in the fridge for about 30 minutes before serving for the best flavor.

Notes

For best texture, consume within 2 days. Rinse quinoa thoroughly before cooking to remove bitterness.
