Ingredients
- Spaghetti or linguine pasta
- Olive oil
- Garlic, minced
- Anchovy fillets
- Crushed red pepper flakes
- Canned tomatoes, diced
- Black olives, pitted and sliced
- Capers, rinsed and drained
- Parsley, chopped
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Once it’s al dente, drain the pasta and set it aside.
- In a large skillet, heat a good drizzle of olive oil over medium heat until shimmering.
- Add the minced garlic and anchovy fillets to the skillet. Cook, stirring often, until the garlic turns fragrant, about 2 minutes.
- Stir in the crushed red pepper flakes and diced tomatoes. Let the mixture simmer for 10 minutes, allowing the flavors to meld.
- Toss in the sliced black olives and capers. Cook for an additional 5 minutes, stirring occasionally.
- Add the cooked pasta to the skillet and gently toss to coat it in the sauce.
- Serve the pasta hot, garnished with freshly chopped parsley.
