Description

A delightful dish that combines bold flavors of olives, garlic, and tomatoes for a quick Italian meal.


Ingredients

  • Spaghetti or linguine pasta
  • Olive oil
  • Garlic, minced
  • Anchovy fillets
  • Crushed red pepper flakes
  • Canned tomatoes, diced
  • Black olives, pitted and sliced
  • Capers, rinsed and drained
  • Parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Once it’s al dente, drain the pasta and set it aside.
  2. In a large skillet, heat a good drizzle of olive oil over medium heat until shimmering.
  3. Add the minced garlic and anchovy fillets to the skillet. Cook, stirring often, until the garlic turns fragrant, about 2 minutes.
  4. Stir in the crushed red pepper flakes and diced tomatoes. Let the mixture simmer for 10 minutes, allowing the flavors to meld.
  5. Toss in the sliced black olives and capers. Cook for an additional 5 minutes, stirring occasionally.
  6. Add the cooked pasta to the skillet and gently toss to coat it in the sauce.
  7. Serve the pasta hot, garnished with freshly chopped parsley.

Notes

This dish pairs well with a green salad and crusty bread. Adjust the red pepper flakes to your spice preference.
