Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup caramel candies, unwrapped
  • 1/4 cup sea salt (for topping, optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  3. Beat in the large eggs one at a time, then stir in the vanilla extract.
  4. Whisk together the all-purpose flour, baking soda, and salt in another bowl.
  5. Blend the dry mixture into the creamed mixture until well combined.
  6. Scoop out a tablespoon of dough, flatten it slightly, and place a caramel candy in the center, then wrap the dough around the caramel and roll it into a ball.
  7. Place the cookie balls on a baking sheet lined with parchment paper and bake for 10-12 minutes.
  8. Sprinkle sea salt on top of the cookies if desired.
  9. Cool the cookies on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For softer cookies, consider chilling the dough for about 30 minutes before baking.
