A delightful dish that combines blueberries with the comforting texture of French toast, perfect for brunch or gatherings.


Ingredients

  • 1 loaf of day-old bread, cut into cubes
  • 2 cups fresh or frozen blueberries
  • 6 large eggs
  • 2 cups milk
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Layer half of the bread cubes in the baking dish, followed by half of the blueberries.
  3. Repeat the layering with the remaining bread cubes and blueberries.
  4. In a bowl, whisk together eggs, milk, sugar, vanilla, cinnamon, and salt until combined. Pour evenly over the bread and blueberries.
  5. Let the dish sit for about 15 minutes to absorb the mixture.
  6. Bake for 45-50 minutes until golden brown and a knife inserted comes out clean.
  7. Cool slightly before serving and dust with powdered sugar if desired.

Notes

Use day-old bread for best results. Can be made the night before and stored in the fridge.
