Description

Delicious Pumpkin Spice Oatmeal Cookies perfect for autumn gatherings with a hint of chocolate.


Ingredients

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup canned pumpkin puree
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the pumpkin puree, egg, and vanilla extract until well combined.
  4. In another bowl, combine the rolled oats, flour, baking soda, cinnamon, nutmeg, and salt. Gradually add to the wet mixture and mix until just combined. Fold in chocolate chips if desired.
  5. Drop tablespoon-sized portions of dough onto the prepared baking sheet with enough space in between.
  6. Bake for 10-12 minutes until edges are golden. Centers may look soft, but they will firm up as they cool.
  7. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to one week, or freeze for up to three months.
