Delicious Pumpkin Spice Oatmeal Cookies perfect for autumn gatherings with a hint of chocolate.

- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1/2 cup canned pumpkin puree
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter, brown sugar, and granulated sugar until smooth.
- Beat in the pumpkin puree, egg, and vanilla extract until well combined.
- In another bowl, combine the rolled oats, flour, baking soda, cinnamon, nutmeg, and salt. Gradually add to the wet mixture and mix until just combined. Fold in chocolate chips if desired.
- Drop tablespoon-sized portions of dough onto the prepared baking sheet with enough space in between.
- Bake for 10-12 minutes until edges are golden. Centers may look soft, but they will firm up as they cool.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Store in an airtight container at room temperature for up to one week, or freeze for up to three months.
