Ingredients

  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/4 teaspoon cloves
  • 1/2 teaspoon salt
  • 1 cup pumpkin puree
  • Optional: 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing well.
  3. In a separate bowl, whisk together flour, baking soda, cinnamon, nutmeg, ginger, cloves, and salt. Gradually mix this into the wet ingredients and stir in pumpkin puree and chocolate chips.
  4. Drop tablespoons of dough onto a baking sheet lined with parchment paper. Bake for about 10-12 minutes until edges are lightly golden.
  5. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
