- 1 cup brown sugar

- 2 teaspoons vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda

- 1/2 teaspoon ginger
- 1/4 teaspoon cloves
- 1/2 teaspoon salt
- 1 cup pumpkin puree
- Optional: 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing well.
- In a separate bowl, whisk together flour, baking soda, cinnamon, nutmeg, ginger, cloves, and salt. Gradually mix this into the wet ingredients and stir in pumpkin puree and chocolate chips.
- Drop tablespoons of dough onto a baking sheet lined with parchment paper. Bake for about 10-12 minutes until edges are lightly golden.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
