Instructions
- Line a baking sheet with parchment paper and grease it with butter or coconut oil.
- In a saucepan over medium heat, combine the maple syrup and salt. Bring to a boil, stirring constantly.
- Add pumpkin seeds to the bubbling mixture and cook for 8-10 minutes until deep amber.
- Remove from heat, stir in vanilla extract, and pour onto the prepared baking sheet. Allow to cool before breaking into pieces.
