Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a large mixing bowl, combine the pumpkin seeds, oats, honey (or maple syrup), nut butter, and salt. Stir until well mixed.
  3. Pour the mixture into the prepared baking dish and press it down evenly. Bake for 15-20 minutes, or until the edges are golden brown.
  4. Allow the bars to cool completely in the dish before cutting them into squares or rectangles.

Notes

For extra flavor, toast the pumpkin seeds beforehand. Experiment with different nut butters and add spices for variation.
