  • 2 eggs
  • 2 cups all-purpose flour

  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the pumpkin puree and eggs to the creamed mixture, mixing until well combined. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, vanilla pudding mix, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry mixture to the wet mixture, stirring until just combined. Fold in chocolate chips if desired.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper and bake for 12-15 minutes or until edges are lightly browned.
  7. Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
