  • 4 slices of bread
  • 1/2 cup canned pumpkin puree
  • 2 eggs
  • 1/4 cup milk
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon sugar
  • Butter for frying
  • Maple syrup for serving

Instructions

  1. Begin by flattening each slice of bread with a rolling pin.
  2. In a medium bowl, combine the pumpkin puree, eggs, milk, cinnamon, nutmeg, and sugar. Mix until smooth and set aside.
  3. Take a spoonful of the pumpkin mixture and spread it evenly over each slice of flattened bread. Roll up each slice tightly.
  4. Heat butter in a skillet over medium heat. Dip each roll-up in the egg mixture briefly before placing in the skillet. Cook until golden brown, about 2-3 minutes.
  5. Remove the roll-ups from the skillet and serve warm with a drizzle of maple syrup.
