- 4 slices of bread
- 1/2 cup canned pumpkin puree
- 2 eggs
- 1/4 cup milk
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon sugar
- Butter for frying
- Maple syrup for serving
Instructions
- Begin by flattening each slice of bread with a rolling pin.
- In a medium bowl, combine the pumpkin puree, eggs, milk, cinnamon, nutmeg, and sugar. Mix until smooth and set aside.
- Take a spoonful of the pumpkin mixture and spread it evenly over each slice of flattened bread. Roll up each slice tightly.
- Heat butter in a skillet over medium heat. Dip each roll-up in the egg mixture briefly before placing in the skillet. Cook until golden brown, about 2-3 minutes.
- Remove the roll-ups from the skillet and serve warm with a drizzle of maple syrup.
Notes
For best results, use thick slices of bread like Texas toast or challah. You can also add chopped nuts or chocolate for variations.
