A delightful twist on the classic French dessert, this Pumpkin Crème Brûlée is infused with warm spices and creamy pumpkin puree, perfect for autumn.

- 2 cups heavy cream
- 1 cup pumpkin puree
- 3/4 cup sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 5 large egg yolks
- Additional sugar for caramelizing
Instructions
- Preheat your oven to 325°F (163°C).
- In a saucepan, combine heavy cream, pumpkin puree, sugar, vanilla extract, cinnamon, nutmeg, and salt. Heat over medium until just simmering.
- In a bowl, whisk egg yolks until smooth. Gradually pour in the hot cream mixture, whisking continuously. Strain through a fine sieve.
- Divide the mixture among ramekins and place them in a baking dish. Add hot water halfway up the sides of the ramekins. Bake for 30-35 minutes until just set.
- Cool, refrigerate for at least 2 hours. Before serving, sprinkle sugar on top and caramelize it with a kitchen torch.
Notes
Store leftovers in the fridge for up to 3 days. Don’t caramelize sugar until just before serving to maintain crunchiness. Use high-quality ingredients for best flavor.
