  • 1/2 cup brown sugar
  • 1/2 cup butter, softened
  • 1 egg

  • 2 cups all-purpose flour

  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup oats
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, white sugar, and brown sugar until smooth and fluffy.
  3. Beat in the pumpkin puree, egg, and vanilla extract until well combined.
  4. In another bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Gradually blend this into the pumpkin mixture.
  5. Stir in the oats and any optional nuts or chocolate chips.
  6. Drop spoonfuls of dough onto ungreased baking sheets.
  7. Bake for 10-12 minutes until the edges are golden brown.
  8. Allow cookies to cool on the baking sheet for a few minutes before transferring to wire racks.

Notes

Use fresh pumpkin puree for best flavor. Adjust sugar and spices if using pumpkin pie filling.
