Description

Ingredients

  • 1 cup pumpkin seeds
  • 1/4 cup light corn syrup
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 tablespoon butter

Instructions

  1. Grease a baking sheet with cooking spray or butter and set it aside.
  2. In a medium saucepan over medium heat, combine the sugar, light corn syrup, and salt. Stir until the mixture begins to boil.
  3. Allow the mixture to boil without stirring until it reaches a rich golden color.
  4. Remove from heat and carefully stir in the baking soda and butter.
  5. Quickly fold in the pumpkin seeds until well coated.
  6. Pour the mixture onto the prepared baking sheet and spread it out evenly.
  7. Let the brittle cool completely before breaking into pieces.

Notes

Store in an airtight container at room temperature for up to two weeks. For best results, use fresh, unsalted pumpkin seeds.
