- 1/2 cup semi-sweet chocolate chips (or sugar-free chocolate chips)
- 1/2 cup natural peanut butter (creamy, no sugar added)
- 2 tbsp coconut oil (melted)
- 1/4 cup vanilla or chocolate protein powder (whey or plant-based)
- 1 tsp vanilla extract
- 1 1/2 cups powdered erythritol (or other powdered sweetener blend, or regular powdered sugar for a less low-carb option)
Instructions
- Begin by measuring out the crispy rice cereal and placing it in a large bowl.
- Combine the semi-sweet chocolate chips, natural peanut butter, melted coconut oil, and vanilla extract in a microwave-safe bowl.
- Microwave the mixture in 30-second intervals, stirring in between, until smooth and well combined.
- Pour the melted chocolate mixture over the crispy rice cereal and gently fold everything together.
- Sprinkle in the protein powder and powdered erythritol, then toss everything together until evenly dusted.
- Spread the coated cereal on a baking sheet lined with parchment paper and allow it to cool for about 10 minutes.
- Once set, break the muddy buddies into pieces and serve immediately.
