Description

A delicious, guilt-free treat combining crispy rice cereal with a rich chocolatey flavor enhanced by peanut butter, perfect for a protein boost.


Ingredients

  • 6 cups crispy rice cereal (such as Rice Chex)
  • 1/2 cup semi-sweet chocolate chips (or sugar-free chocolate chips)
  • 1/2 cup natural peanut butter (creamy, no sugar added)
  • 2 tbsp coconut oil (melted)
  • 1/4 cup vanilla or chocolate protein powder (whey or plant-based)
  • 1 tsp vanilla extract
  • 1 1/2 cups powdered erythritol (or other powdered sweetener blend, or regular powdered sugar for a less low-carb option)

Instructions

  1. Begin by measuring out the crispy rice cereal and placing it in a large bowl.
  2. Combine the semi-sweet chocolate chips, natural peanut butter, melted coconut oil, and vanilla extract in a microwave-safe bowl.
  3. Microwave the mixture in 30-second intervals, stirring in between, until smooth and well combined.
  4. Pour the melted chocolate mixture over the crispy rice cereal and gently fold everything together.
  5. Sprinkle in the protein powder and powdered erythritol, then toss everything together until evenly dusted.
  6. Spread the coated cereal on a baking sheet lined with parchment paper and allow it to cool for about 10 minutes.
  7. Once set, break the muddy buddies into pieces and serve immediately.
