- 2 bell peppers, diced
- 1 onion, diced
- 2 yellow potatoes, diced
- 2 tablespoons olive oil
- 1 pound lean ground meat
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 6 eggs
- 2 egg whites
- 1 cup cottage cheese
- 1 cup shredded cheddar cheese
- 10 tortillas
- Optional: fresh cilantro and favorite sauces for serving
Instructions
- Preheat your oven to 400°F (200°C). Spread the diced bell peppers, onions, and potatoes evenly on a large sheet pan. Drizzle with olive oil and season with salt and pepper. Toss to coat.
- Roast the vegetables in the oven for 20-25 minutes until golden brown and potatoes are tender.
- Spread the lean ground meat over the roasted vegetables, breaking it into small crumbles. Season with spices and return to the oven for 10-15 minutes until cooked through.
- Blend the eggs, egg whites, and cottage cheese until smooth.
- Pour the egg mixture over the meat and vegetables, top with cheese, and bake for 12-15 minutes until set.
- Cool for 20-30 minutes, then slice into equal portions and wrap in tortillas.
- Wrap burritos and freeze. For reheating, microwave directly from frozen.
