Ingredients

  • 2 bell peppers, diced
  • 1 onion, diced
  • 2 yellow potatoes, diced
  • 2 tablespoons olive oil
  • 1 pound lean ground meat
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 6 eggs
  • 2 egg whites
  • 1 cup cottage cheese
  • 1 cup shredded cheddar cheese
  • 10 tortillas
  • Optional: fresh cilantro and favorite sauces for serving

Instructions

  1. Preheat your oven to 400°F (200°C). Spread the diced bell peppers, onions, and potatoes evenly on a large sheet pan. Drizzle with olive oil and season with salt and pepper. Toss to coat.
  2. Roast the vegetables in the oven for 20-25 minutes until golden brown and potatoes are tender.
  3. Spread the lean ground meat over the roasted vegetables, breaking it into small crumbles. Season with spices and return to the oven for 10-15 minutes until cooked through.
  4. Blend the eggs, egg whites, and cottage cheese until smooth.
  5. Pour the egg mixture over the meat and vegetables, top with cheese, and bake for 12-15 minutes until set.
  6. Cool for 20-30 minutes, then slice into equal portions and wrap in tortillas.
  7. Wrap burritos and freeze. For reheating, microwave directly from frozen.
